Campfire Burrito
Make this compact camping food ahead of time, freeze, and throw on the fire!
- 16 oz ground beef or meat alternative
- 1 onion, diced
- 1 bell pepper, diced
- 3 medium tomatoes, diced
- 16 oz black beans, drained and rinsed
- 8 oz cooked rice
- 8 oz shredded cheese
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper, to taste
- 6 large tortillas
- Avocado slices
- Sour cream
- Chopped cilantro
- Hot sauce
- Aluminum foil, for wrapping burritos
Cook 1 lb of ground beef or meat alternative in a skillet until browned, then add diced onion, and diced bell pepper, cooking until softened. Stir in 1 can of drained black beans, 1 cup of cooked rice, diced tomatoes, 1 tsp each of chili powder and cumin, and salt and pepper to taste. Once heated through, remove from heat. Lay out 6 large flour tortillas, spoon the filling onto each, and sprinkle with shredded cheese. Fold the sides and roll them up tightly, then wrap each burrito in heavy-duty aluminum foil. Place in the freezer and freeze overnight. At camp, place the foil-wrapped burritos on hot coals or a grill grate over a campfire for 10-15 minutes, turning occasionally, until heated through. Unwrap and enjoy with optional toppings like avocado, sour cream, chopped cilantro, or hot sauce.
Campfire Bruschetta
You can prep this ahead of time or around the campfire, and have it as a snack or a whole meal!
- 1 baguette or crusty bread loaf, sliced
- 14 cherry tomatoes, diced
- Fresh basil, chopped
- 3 cloves garlic, minced
- 2 oz olive oil, plus extra for brushing bread
- 1 tbsp balsamic vinegar
- Salt and pepper, to taste
In a bowl, combine tomatoes, basil, garlic, olive oil, and balsamic vinegar; season with salt and pepper, and let the mixture marinate. At the campfire bead slices with olive oil on both sides and toast over a campfire grill grate or skillet until golden brown, about 2-3 minutes per side. Remove the bread from the grill, then top each slice with the tomato mixture.
Grilled Chicken Skewers
Prep the chicken beforehand and store in the cooler so that it marinates before grilling.
- 2 boneless, skinless chicken breasts, cut into cubes
- 1 bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, sliced
- 3 oz olive oil
- 8 oz plain yogurt
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper, to taste
- Metal skewers
At home combine olive oil, lemon juice, yogurt, garlic, oregano, salt, and pepper. Add chicken cubes and store chilled in a tupperware container until ready to grill. Thread chicken and vegetables onto skewers. Grill over the campfire, turning occasionally, until chicken is cooked through and vegetables are tender, about 10-15 minutes.
Campfire Banana Boats
A sweet and fun s’mores alternative that’s easy to prepare and cook over the campfire.
- 4 bananas
- 8 oz chocolate chips
- 6 oz mini marshmallows
- 6 oz crushed graham crackers
- Aluminum foil, for wrapping bananas
Make a deep slit along the inside curve of each banana, being careful not to cut all the way through. Gently open the slit and fill with chocolate chips, mini marshmallows, and crushed graham crackers. Wrap each banana in heavy-duty aluminum foil. Freeze if preparing in advance. At camp, place foil-wrapped bananas on hot coals or a grill grate over a campfire for 5-10 minutes, until chocolate and marshmallows are melted.
Campfire Apple Crisp
Prepare and cook this delightful dessert in a cast iron pan for a sweet treat around the campfire.
- 6 apples, pre-peeled and sliced
- 2 oz sugar
- 1 tbsp cinnamon
- 8 oz rolled oats
- 4 oz brown sugar
- 2 oz flour
- 4 oz butter
In the cast iron coat apple slices with sugar and cinnamon. Add rolled oats, brown sugar, flour, and butter, mixing until crumbly. Spread the apple mixture in a cast iron skillet or Dutch oven. Sprinkle the oat mixture evenly over the apples. Cover with top or foil and place over the campfire, cooking until the apples are tender and the crumble is golden brown, about 20-30 minutes.
